Celebrate National Cookie Day With Yummy Recipes

Orange County Catholic schools encourage your family to spend time together through the art of baking, and December 4th is National Cookie Day! Celebrate with your child by baking these scrumptious and easy cookie recipes. A full cookie jar means a happy home!

No-Bake Butter Blossoms
A mix of Rice Krispy treats and chocolate is a sweet twist on a classic your child will love. This simple recipe takes about 25 minutes and makes about 2 ½ dozen cookies.

Ingredients:

  • 32 milk chocolate kisses

  • 3 cups of Rice Krispies

  • ½ cup corn syrup

  • 1 cup Biscoff creamy cookie spread

Preparation:

  1. Combine cookie spread and corn syrup in a large pan.

  2. Cook on low heat, stirring until blended.

  3. Turn off heat, then add in Rice Krispies until they are coated.

  4. Scoop a tablespoon of the mixture into balls, then place on waxed paper.

  5. Place chocolate kiss at the center of each cookie.

  6. Let stand until it sets.

  7. Enjoy!

Walnut-Chocolate Thumbprints
These delicious cookies are a modern twist on the classic chocolate chip. Rolled in walnuts and topped with cherry preserves, these treats give you a gooey yet crunchy snack. Set aside an hour to make a dozen of these little drops of heaven.

Ingredients:

  • ½ cup cherry preserves

  • 1 cup butter

  • 1 cup unsweetened cocoa

  • 1 large egg

  • ¼ teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 cup all-purpose flour

  • 2 ounces of unsweetened chocolate

  • 1 ½ cups walnuts

Steps:

  1. Preheat your oven to 350 degrees.

  2. On a low speed, use a mixer to cream together sugar, cocoa, butter, and salt in a large bowl.

  3. Add in vanilla and egg yolk until blended, then beat in chocolate. Beat in flour until combined.

  4. With a fork, beat egg whites in a small bowl. Set aside.

  5. Spread walnuts on a plate. Roll dough into 1-inch balls, then lightly coat balls in egg white. Roll in walnuts again. On two large ungreased cookie sheets, place cookies 1 ½ inches apart. 

  6. Bake for eight minutes. Halfway through baking, switch sheets on racks. Fill each cookie with ¼ teaspoon of preserves. Then, bake for eight to 10 minutes more, until the jam gets bubbly. Let cool for two minutes, then enjoy!
