Meatless Recipes for Easter Dinner

Meatless Easter doesn’t have to be a challenge for your picky eater. Plan ahead with these delicious vegetarian recipes from the best Catholic schools in Orlando! Once she eats these meals, she will be asking for them all year round! 

Lentil Shepherd’s Pie
By simply swapping beef for beans in a classic shepherd’s pie, you’ll be having a healthier meal that is lower in fat and cholesterol than traditional meat-based pies. Using lentils in this oven-baked casserole is a hearty way to deliver a delicious Easter meal. 

Ingredients

  • ½ pound of cooked and drained lentils

  • 1 diced onion

  • ½ tsp. minced garlic

  • ½ tsp. fresh sage

  • 3 large cooked potatoes

  • ½ cup to 1 cup hot milk of choice

  • 1 tsp. salt

  • Dash of cayenne pepper

  • Pinch of dried oregano

  • Margarine

Directions:

  1. Preheat oven to 400 degrees. 

  2. Lightly grease a baking dish.

  3. In a large bowl, mash the lentils.

  4. Add the sage, garlic, onion, cayenne pepper, and oregano.

  5. Put the mixture in an even layer in the baking dish.

  6. In another bowl, mash the potatoes and add the hot milk, salt, and margarine. Beat until smooth and creamy.

  7. Spread the potatoes on top of the lentils.

  8. Bake for 20 minutes.

Asparagus Quiche
Made with chickpea flour, this asparagus quiche is egg-free, gluten-free, soy-free, and of course, guilt-free! Perfect for breakfast, lunch, or dinner, this recipe highlights asparagus, which could be your child’s new favorite vegetable! 

Ingredients:

  • 1 ½ cups of garbanzo flour

  • 2-3 tbsp. of parmesan

  • 2 garlic cloves, minced

  • 15-20 asparagus spears

  • 2 tbsp. nutritional yeast

  • 1 tsp. salt

  • 3 tbsp. olive oil

  • 1 ½ cups water

Instructions:

  1. Preheat oven to 350 degrees.

  2. Lightly grease a nine-inch pie plate, then set aside.

  3. In a bowl, mix the flour, nutritional yeast, salt, and pepper. 

  4. Whisk in water, oil, and garlic, removing any lumps. Set aside.

  5. Wash the asparagus and remove the ends, then cut into small pieces.

  6. In an even layer, spread the asparagus on the pie plate.

  7. Pour batter over the asparagus. 

  8. Sprinkle with parmesan.

  9. Bake for 30 minutes until the middle is set.

  10. Broil until the top is brown.
