Fruit-Filled Summer Rolls
This nutritious twist on classic savory summer rolls is easy to make and very healthy. Have your child simply choose her favorite fruits and wrap it up into a summer roll using rice paper! This sweet treat is a perfect refresher during the warmer weather.

Kiwi Sliders
This recipe adds a tropical punch to classic sliders for the summer. Start with your child’s favorite burger patty, whether it’s beef-, turkey-, or bean-based. Then, top it with a deliciously fresh kiwifruit chutney. It takes just five minutes to make this delicious topping.

Ingredients:

  • 2 kiwis, peeled and finely diced

  • 1 tablespoon golden raisins

  • 2 teaspoon sugar

  • 1 teaspoon lemon juice

  • ½ teaspoon salt

Instructions:

  1. Combine and mix ingredients together in a small bowl.

  2. Transfer to a blender or food processor.

  3. Pulse three to four times.

  4. Store in the refrigerator in a glass jar

  5. Top your burgers!

Grilled Pineapple Shortcake
This sweet, delectable dessert is made with grilled pineapple and pound cake, topped with pineapple-coconut ice cream. The prep takes just 10 minutes and requires only a few steps to cook.

Ingredients:

  • ¾ cup orange-pineapple juice

  • 1 tablespoon cornstarch

  • 3 tablespoons dark brown sugar

  • ½ teaspoon coconut extract

  • 1 peeled and cored pineapple

  • 1 small prepared pound cake

  • 1 pint pineapple coconut ice creams (recommended: Haagen Dazs)

Instructions:

  1. Stir together 1 tablespoon of the juice mixed with the cornstarch, then set aside.

  2. In a small saucepan, combine the remaining juice with brown sugar. Over medium-high heat, bring to a boil, then simmer for 10 minutes.

  3. Stir in the cornstarch mixture and cook for two minutes. Set aside.

  4. Cut the pineapple into 8 slices that are ¾-inch thick. 

  5. Cut pound cake into 8 slices, about 1-inch thick.

  6. Grill pineapple slices on medium heat, turning once after five minutes.

  7. Grill pound cake slices for two minutes, turning once.

  8. Serve the pound cake slices topped with the grilled pineapple and a scoop of ice cream. Drizzle with the remaining sauce, and enjoy!
